Apple Kale Salad with Peanut Vinaigrette

The pretty, warm sunshine, and the fantastic Florida weather is quickly approaching and that mean one thing. Swimsuit Season. I would like to look and feel good in a swimsuit before the season arrives. Since we’ve been home from traveling over the holidays, I’ve been on a major vegetable and salad kick. All I’ve been craving and wanting to eat are vegetables. Seriously, I know it sounds crazy to not eat bacon. Okay, well maybe I am, but after traveling and being at the mercy of other people menus and a guest in other people’s homes where cookies, candy, and all things sweet are in a food group of their own. Salads and vegetables are a refreshing treat. I’ve put on my creative hat and had really made some winners. I’ve been in love with this new creation, Apple Kale Salad with Peanut Vinaigrette.
Sweets are no longer a food group since the holidays are over. I now have zero excuses about “oh, I’m too busy today to hit the gym” and because let’s face it holiday shopping is not a workout despite how many bags we carry.
The Apple Kale Salad with Peanut Vinaigrette has been a lunch or dinner staple for our meals. Oh, and it’s so delicious. I’ve been on a huge kale kick lately because kale keeps it’s fabulous crunch even with vinaigrette on it. For this salad, I use a Baby Kale Blend because it holds my Peanut Vinaigrette so beautifully and it’s a bit less bitter than some of the other Kale varieties.
This Apple Kale Salad with Peanut Vinaigrette has quickly become one of my favorites because of the peanut flavor in the Peanut Vinaigrette. The fresh apple, golden raisins, and the touch of maple syrup add just the perfect amount of sweetness to the baby kale blend. I’ve been making the vinaigrette with Jif™ Peanut Powder instead of peanut butter. It adds some extra protein without the added salt or sugar like traditional peanut butter. Honestly, I’ve been a little obsessed with it adding in smoothies and oatmeal too.

What You Need:
- 4 cups Baby Kale Blend
- 2 tablespoons Jif™ Peanut Powder
- 1 Apple (Pink Lady)
- ¼ cup Golden Raisins
- ¼ cup Sliced Almonds
- ¼ cup White Wine Vinegar
- ¼ cup Extra Virgin Olive Oil
- 1 teaspoon Maple Syrup
- 1 teaspoon scallion (only the white part)
- Salt
- Pepper
How To:
- In a bowl add white wine vinegar, maple syrup, Jif™ Peanut Powder and stir it together until it is all mixed in.
- Then add to the same bowl, scallions, salt and pepper and extra virgin olive oil and stir well till the dressing is all combined.
- Then put the salad together. Put the baby kale blend into a bowl.
- Sprinkle golden raisins, sliced almonds, and sliced apple on top of the baby kale mix.
- Then dress the salad with the Peanut Vinaigrette.
I picked up some Jif™ Peanut Powder while I was at Walmart.
