Zucchini Boats! Maybe a new favorite! Lately, I’m all about stuffing veggies, and why should zucchini be left out. So zucchini boats! My dear friend has been the inspiration, she made these little delightful treasures for us and I’ve been having a blast experimenting with different items to stuff them with! So far my favorite has been sauté onion, garlic, and shiitake mushrooms and a sprinkle of Parmesan cheese! Great recipe for vegetarians, vegans or Paleo’s! Just omit Parmesan!Super easy and good for you too.
What you need:
5- 6 shiitake mushrooms
1 tbsp chopped garlic
Parmesan cheese (optional/ omit if vegan)
1-2 tbsp Olive oil
Cut zucchini in half long ways
Scoop out seeds, and place to the side
In a pan, add olive oil and sauté garlic, onion, shiitake mushrooms and the scooped out seeds
Then stuff mixture into zucchini
Sprinkle with Parmesan cheese
Grill on the BBQ for 15- 20 minutes on medium high
Serve as a side dish with your favorite entree!
