Lazy days of summer are here! We’re on the cusp of school starting and getting busy with afterschool activities. Days filled with swimming and playing till sunset and nights filled with catching fireflies are slowly coming to an end. It’s still summer after all, where ice cream is a major food group and we’re not ready to hang up that! Especially not Little Dude and Caramel Vanilla Ice Cream Pie.
Little Dude has been asking for his favorite. Caramel Vanilla Ice Cream Pie with his favorite ice cream! Of course, I obliged. I love making this simple dessert. Check it out!
Caramel Vanilla Ice Cream Pie
What You Need:
1 box of graham crackers
4 tbsp butter, melted
1 container of Mayfield® Turtle Tracks Ice Cream
4 cups whipped Cream
Caramel Sauce
How To:
Put graham crackers into the food processor or blender. Pulse in short bursts until you have coarse graham cracker crumbs.
Transfer the graham crackers to a bowl.
Melt the butter and pour over the graham crackers.
Stir until the crumbs are evenly coated and look wet. (The crumbs should hold together in a clump if you press them in your fist.)
Heat the oven to 375° F. Pour the crumbs into a 9-inch pie pan and press them evenly along the bottoms and sides.
Pre-bake the crust for 8 to 10 minutes until dry and fragrant. Cool completely before proceeding with the recipe.
Let the crust cool completely before proceeding with the rest of the recipe.
Remove Mayfield® Turtle Tracks Ice Cream from the freezer and let the container sit out 5-10 minutes.
Fill crust with Mayfield® Turtle Tracks Ice Cream.
Top with a layer of whipped cream.
Drizzle with caramel sauce.
Place Caramel Vanilla Ice Cream Pie in the freeze for 4 hours before serving.
