Easy pesy one pot meal! You can even make it in your crockpot while your at work. This is the simplest roast recipe ever and it comes out great every time. It’s healthy, gluten- free, and Paleo.
From slow cooking, the roast is so tender it falls apart. It is so flavorful and delish your family is sure to love it! And it makes your whole house smell amazing! Serve with a salad or some steamed veggies.
What you need:
Grass- fed 2- 3 1/2 top round or bottom round roast
1 large onion, cut into wedges
4- 5 stalks of celery, cut into larger chunks
4- 5 carrots, cut into larger chunks
1 1/2 tbs of chopped garlic
3 bay leaves
1 15 oz can of tomatoes sauce, (I use Muir Glen)
1/4 cup of water
1/2 tsp of salt
1/2 tsp of pepper
How to:
I use my slow cooker but you could use a crockpot or your oven.
First, if you have a slow cooker use the sauté setting and brown all sides of the roast. If you are using your oven you will need to brown the meat in a frying pan on medium heat.
Then, switch the setting to slow cook. If your using your oven, once meat is browned on each side transfer it into a Dutch Oven or casserole dish with a lid.
Add onions, celery, carrots and can of tomatoes sauce & water. Next, add garlic, bay leaves, salt & pepper.
For slow cooker cook on high for 5- 6 hours or low for 7- 8 hours.
For oven, cook at 300 degrees for 4 hours or until meat is very tender. Check it half way, may have to add another 1/4 cup of water.
