Spooky Halloween Witches Brew… Pea Soup. Happy Halloween! Hope you have a happy & safe Halloween. Enjoy this Paleo, Gluten Free, Low Carb & Low- Fat soup! Omit the bacon for a vegetarian or vegan option! This is the perfect dinner for Halloween, toss it in the slow cooker and off you go!
I remember my mom making Pea Soup during my childhood. And I always thought, I will never make that! And isn’t life funny! Here I am making fabulous Pea Soup. My mom is so proud! On a chilly day, soup is the only way to go. Healthy, easy, and delicious. I’ve been a little obsessed with my slow cooker so of course this recipe was also cooked in the slow cooker! My favorite appliance besides my Vita-Mix. The Breville Risotto Cooker is hands down the best one out there! It does every from saute’ to slow cook to steam! You would think Breville hired me and I was getting paid or something but I’m not! Seriously best tool for 1 pot meals! Now go add that to your Holiday must have list!
What you need:
1 tablespoon of garlic
1 large onion
2 carrots
2 stalks of celery
1 teaspoon of coconut oil
2 cups of dried green split peas
4 cups of vegetable broth
6 cups of water
3 bay leaves
1/2- 1 teaspoon black pepper
***optional 1 package of bacon
How to:
Chop onion, celery, garlic and carrots into small pieces.
Saute’ in Coconut oil till vegetables are soft
Add 4 cups of vegetable broth and 4 cups of water
Add dried split peas
Let boil 10 minutes on saute’ setting
Then switch setting to slow cook high (4-6 hours)
Cook bacon and let cool
Serve soup with 2-3 slices of bacon crumbled on top
