Crazy busy couple of weeks! Not sure what day it is, feeling unorganized! I love to plan ahead and have some meals ready! This is one of those meals that you can always whip together.
It’s been so cold out! Wanted to warm my family up with some yummy comfort food! So decided to make some Lentil Soup in the slow cooker! Healthy and packed with protein. And my Little Man loves it!
Lentil Soup
What you need:
1-2 large carrots
1-2 celery stalks
1 onion
2-3 tbsp of chopped garlic
1-2 tbsp olive oil
1 bag dried lentils
Handful of spinach chopped
3 cups of veggie broth
4 cups water
Salt & pepper to taste
How to:
1. Rinse lentils.
2. Chop carrots, celery, onion, and garlic.
3. Sauté in olive oil onions, carrots, celery, and garlic in a large pot.
4. Throw in spinach.
5. Add vegetable broth and water to large pot.
6. Add lentils cook for 4 hours on medium-low heat or in a slow cooker for 6- 8 hours.
Serve topped with some shredded Parmesan Cheese.
