Between Little Dude’s after school activities and the temperatures rising. I have been trying to come up with some easy meals for my family. It’s a little too warm here in Florida for soups and crockpot meals. I find my weekly go to meals changing, and I’m constantly looking for delicious, healthy, and easy meals to make for my family.
These last few weeks have been insanely busy for our family, and I’m trying to stay organized with meal planning. I’ll be honest, sometimes on busy mornings I forget to take whatever I was planning out of the freezer. By the time I realize it’s too late for items to defrost.
Everyone is starving by the time we come home from activities and hubs comes home from work. I either need to have something ready, leftovers, or something that I can cook quickly. The only other requirements are the meal must contain quality ingredients, and it is something my family will enjoy.
While I was walking up and down the aisles at Publix, I found these new Freschetta pizzas and our family now has a pizza night. We’ve had a weekly pizza night for a few weeks, and it is making our crazy busy week just a bit easier. I have been pairing this pizza with this fresh, delicious Watermelon, Strawberry & Cucumber Salad for a fast and easy dinner.
Watermelon, Strawberry & Cucumber Salad
What You Need:
2 cups Watermelon
2 cups Strawberries
2 cups Mini English Cucumbers
2 tbsp Balsamic Vinegar
How To:
Chop the watermelon, strawberries, and cucumber.
Place into a bowl.
Toss with balsamic vinegar.
Pair with pizza.

I had this in camp years ago. Loved it and have tried making it before also. Never knew of the balsamic vinegar BUT the camp I believe had added FETA cheese to it in cubes. Added that little salty to it. I am making this tonight for friends and pairing with smoker cooked hand pressed and seasoned hamburgers. Whatever salad is left will be eaten by me. NOw to make this for a minimum 8 people. Just using whole watermelon or close and a few pounds strawberries (hulled and chopped) and couple long english cucumbers. Thanks for sharing this recipe. Didn’t take long to find.
