In our home for as long as I can remember Sunday Night is Pasta night. Growing up I remember my dad making sauce all day on Sundays. I remember him chopping ingredients for sauce or gravy after breakfast. The delicious smell of fresh ingredients filled our home as his sauce or gravy cooked until it was dinner time. Sunday night pasta night is a tradition I brought into my own family. I love creating new healthy dishes for my family with fresh ingredients like this Summer Pasta Recipe.
Some Sunday I, unfortunately, don’t have time to cook sauce all day like my father did. With Little Dude having sports and games. I look to incorporate different fresh ingredients into my dishes. I love adding in fresh vegetables. I found some beautiful looking organic zucchini and summer squash at our neighborhoods Farmers Market. I thought they would be perfect for this Summer Pasta Recipe.

Summer Pasta Recipe
What You Need:
2 cups shredded zucchini
2 cups shredded summer squash
1/2 tsp Garlic
1/4 tsp Pepper
Dash of salt
1 package Barilla Whole Grain Pasta Spaghetti
2 cups Chicken broth
1/4 cup Parmesan cheese and extra to sprinkle on top
How To:
- Wash and shred the zucchini and summer squash.
- Cook Barilla Whole Grain Pasta according to directions on the box.
- In a large sauté pan over medium heat add shredded zucchini, summer squash, chicken broth, garlic, pepper, and salt.
- Reduce the heat to low and let it cook for 5 minutes, stirring occasionally.
- Once cooked add in pasta.
- Add parmesan cheese and stir it together.
- Serve with some extra parmesan cheese and crushed red pepper (optional).
