Taco, Burritos, Fajitas, and salsa… What’s your favorite Cinco de Mayo food? We love Mexican in our home! It is one of my go to’s, and Mexican is my hubby’s favorite origin of food! I love the versatility of Mexican food. I can make a roast have that one night then use the left overs for taco’s the next night! Just have to add some spices and trimmings! And it always tastes amazing. Check out these easy, healthy dinner options for Cinco de Mayo!
It’s one of those easy dishes that you really don’t have to do much with the fresh veggies and herbs give it some much flavor it is amazing! It’s a slow cooked so all the flavors blend together. The chicken becomes so tender and doesn’t dry out! I like to serve this over a salad or make use it as the filling of Tacos.
Paleo, gluten free, low- fat & low- carb goodness! Tacos are so fun to eat! Everyone can make them how they like! Great party food! Finger food fun! And best thing is they are incredibly easy to make! Using the Butter Lettuce as the taco shell gives these an amazing fresh flavor and crunch satisfaction! However, they are a ton more healthier then corn or flour shells.

Happy Cinco de Mayo! I love Mexican food too. It’s funny because they all revolve around very similar ingredients but are so distinct with the way they’re put together. I’d have to say my favorite are tostadas and quesadillas.
