Clean, healthy, eating! Getting fit & healthy has been a New Year’s Resolution of ours. I would say for the most part we’re pretty healthy however, we maybe eating too many carbs?? So hard to tell till you eliminate them then, it’s like a mind blow once you eliminate them you have a ton more energy, you can think clearly, and you feel great! Cutting out the processed food and sticking with fruits and veggies!!
This morning I experimented with my favorite Quiche and turned it into a Frittata! I omitted the whole wheat pie crust to cut out the extra carbs. I used egg whites and parmesan cheese to make it more low fat. It is now a yummy Frittata! Enjoy!
What you need:
Pie dish
16oz egg whites (1carton of Organic Valley Eggwhites)
1 small onion, chopped
1 zucchini, shredded
1 cup broccoli
1 tbsp garlic
1 cup Parmesan cheese
1 cup of Almond Milk
1tbsp Sunflower oil
Add salt & pepper if you want
How to:
Preheat oven to 325 degrees
Sauté onion, zucchini, garlic and broccoli in sunflower oil.
Spray pie dish with olive oil cooking spray
Pour in eggwhites and almond milk in to pie dish
Stir in veggies and Parmesan
Cover loosely with foil for 30 minutes, then remove foil
Cook for another 35 minutes and remove from oven
And voila! Healthy Frittata! Enjoy!!
Serve hot or cold with fresh fruit!!
